It's Totally Okay to Saute With Olive Oil Over High Heat

Due to its low-ish smoke point, olive oil isn’t the best choice for searing meats or other single-layer, high-temperature cooking methods. But, as Chef Helen Rennie explains in the above video, that doesn’t mean you can’t crank up the heat on your range to caramelize onions or saute potatoes.
