Certain dishes just aren’t destined for Instant Pot greatness, particularly those that get their magic from constant stirring and slow, controlled liquid reduction. While I fear there’s no hands-off Instant Pot French onion soup recipe worth a damn, I think I’ve finally cracked the polenta code.
