Coming from a catfish-eating family, I never had much use for salmon until I moved to the Pacific Northwest. The two fishes couldn’t be more different in texture, flavor, or styles of preparation, but finally, at nearly 35 years of age, I figured out my favorite way to make salmon, and it involves the air fryer.
